JOY BEATTIE – Owner / Head Chef.
Joy started her culinary journey at Cathal Bruagh street studying Culinary Arts. Following that she began her training in City West hotel under Head Chef Derek Mcloughlin for over 3 years. During this time Joy was involved in national and international competitions having captained the Junior Irish Culinary Team with awards from the Culinary World Cup and winning the grand prix in Hotelympia in London.
Having spent time working in Cognac in France, Fado Restaurant in Dublin and under Ross Lewis in Chapter One, she went travelling working in Australia along the way.
On her return she began working in the Four Seasons Hotel in Dublin, under Ex Chef Terry White, but also working with Michelin based Chefs Michael Brough and Julian de Vite. Leaving after 5 years as Sous chef.
A trip across the water brought her to a one star Michelin restaurant called Chapter One (no connection to the one in Dublin) in Kent just south of London, under Chef Andrew McLeish for almost 2 years.
A move to the country brought her to the beautiful Cotswolds working under Chef Duncan Ray in the Five Alls.
